This one has been a long time coming! After years of planning, we are delighted to have had the chance to collaborate with our friends at the Wicklow Wolf and brew something incredibly special together.
We first met Quincy and Simon back in 2014 when they had just formed their brewery and we were at the early stages of starting Nobó. Over the years we have stayed in touch, sharing advice and stories as two young Irish start-ups.
We were welcomed into their amazing new purpose built brewery and Taproom in Newtownmountkennedy, Co. Wicklow last month to help start the process of brewing our collaboration Stout.
Head Brewer John Allen talked us through every step of the process and how they created this unique recipe using our Smooth & Creamy Chocolate as the inspiration. Putting a twist on their Apex Oatmeal Stout, they used as much Irish oats as the mash tun could take.
The end creation is Apex: Nobó, a creamy 5.5% chocolate oat milk stout with a hint of coconut. It has been crafted around the flavours of our ‘Smooth & Creamy’ chocolate. Brewed with oat milk, Congolese cocoa nibs and toasted coconut. The result is an extremely moreish Stout with a smooth and creamy mouthful, full of milk chocolate flavours and a hint of coconut to finish.
Wicklow Wolf now run scheduled guided tours every Friday, Saturday and Sunday of their new brewery, followed by a guided tasting of some of our beers in the Taproom. Apex Nobó is currently on tap, so don’t miss the chance to enjoy a pint with a complimentary Nobó chocolate button while stocks last!
